Sneaky, Nutrient Packed Pesto

Pesto is a great way to sneak healthy food into a child’s meal… it gives moms a way to insert nutrient dense food, in a fun way.  Whether you call it “Green Slim Chicken,” or “Irish Pasta” (get it? haha!) – you are able to hide so many vegetables, herbs, oils and nuts, so be creative!  In the meantime, here is one Pesto that my kids love:

–  1+ cup of baby kale

– 1+ cup of baby spinach

– 1 cup fresh parsley

– 1/2+ cup walnuts

– 2 large cloves of garlic

-1/2 cup of organic Parmesan cheese

– 1/2+ cup of EVOO

– 5 Black Olives (pitted)

– 3 (lg) Shiitake Mushrooms

– Sea salt and fresh cracked pepper to taste

The great thing about Pesto is that you can use carrots, kale, parsley, cilantro, basil, almonds, etc. Just throw it all in a food processor and let it sit for at least 30 minutes, covered. This is not cooked so it is easy and quick to make, while preserving the nutrients!  Add it to chicken, or a gluten-free pasta 🙂  Have fun with it and let’s hope they enjoy!
